The game in 'Myst III Exile' seems to be an unknown game variant.

Could you please provide more information about this version

This is the Myst 3 DVD version from the 10th anniversary collection. The readme file on the disc says that the application is "Version 1.27 for Windows 95 / 98 / ME / XP and Mac OS 8.1 or 9.1 or OS 10.1" dated July 21, 2003. The disc image was taken with Disc Utility on MacOS 10.14.6.

The ScummVM version is 2.5.0 running on MacOS 11.6.1.

Do you have one of the following files on the disk?

ENGLISH.m3u, FRENCH.m3u, DUTCH.m3u, GERMAN.m3u, ITALIAN.m3u, SPANISH.m3u.

In general, detection for this version was added 5 years ago.

There's a language.m3u file in a subfolder called Myst III English. I moved that file to the main folder and renamed it to ENGLISH.m3u. Now the game is recognized and loads correctly. This resolves the issue, thank you so much!

Oh! That is quite important then for us to have the original disk layout supported, so no renames are required.

Could you please provide the recursive list of the CD, like with "DIR /S" on Windows or "ls -alR" on *nix/Mac?

Also, could you please describe what this version is, e.g. some kind of re-release or anything that could make it distinct?

Yes, this is the single-DVD release which was part of the "Myst 10th Anniversary Collection" released in late 2003. This box set included Myst Masterpiece, as well as Riven on DVD. ​https://www.mobygames.com/game/myst-10th-anniversary-dvd-edition

This is still bug #14513, #13979, #13945, etcetera.
It is not trivial to fix unless somebody changes how the detection works in the engine to support to original layout.
