ScummVM version: 0.7.1 Language: Spanish Version: Talkie Platform: DOS
Bug details: When the "display subtitles" is activated the speech sound of whoever is talking stops before its time to end, and the following dialogue sound starts. The speech sound stops at the same time that the subtitle change to the next dialogue, and so the new sound starts.

This a limitation of the original game engine, as mention in known issues section of README. Closing as invalid as this isn't a ScummVM specific bug.
You can use the F1 - F3 keys to adjust the subtitle speed, which will help in some locations. But the slowest subtitle speed will triggers more bugs of the original game.

That's a known bug, listed in the README file:
"Simon the Sorcerer 2: - Combined speech and subtitles will often cause speech to be cut off early, this is a limitation of the original game."
The original interpreter only allowed you to use subtitles or speech, not both. At least, that's how the English version behaved.
